In the corners of the space, you’ll discover unique ethnic accessories, such as hand-carved wooden totems crafted by local artisans, which lend the room its character and charm.
Live plants like roses, olive trees, lemon trees, and ivy breathe freshness into the space, connecting it to the natural world and fostering a sense of tranquility. At the heart of the room stands the red table—a striking centerpiece, believed by legend to bring good fortune to those who dine at it.

A technique rooted in many traditional cultures, used to create rich flavours and textures. Our meats undergo careful aging in dry-aging chambers, while fermented sauces, vegetables, broths, and beverages — like cucumber kvass — bring layers of richness to every dish.

This ancient method infuses meats, fish, vegetables, and sauces with unique aromas. Our dishes are smoked just before serving or prepared in advance. Our homemade beef bacon, perfected over 10 days of marinating, fermenting, and smoking, is a true labor of love and craft.

The concept of Etna’s cuisine revolves around the use of primal cooking methods, offering a unique experience that blends ancient techniques with a modern presentation.
In select dishes, we take smoking to the next level by directly integrating charcoal into the cooking process. Our chimichurri sauce — made with a rich blend of herbs — is sealed with charcoal to deepen the flavour and create a unique taste experience.

Fire is at the heart of our cooking, with dishes prepared on grills, in Josper ovens, and wood-fired stoves. Guests are invited to watch the captivating, dynamic process as our chefs expertly work with open flames.
